Market to Table: Spiced Lentil Stew and Curry Brown Rice

Who doesn’t love lentils?  If you don’t, please give this recipe a try.  You’re sure to fall in love!  My children truly enjoy lentils, especially the 3 and 4 years olds.  Lentils are very filling, and readily absorb the taste of whatever seasonings and veggies added to them.  They are easy to make and don’t require soaking like many other beans do.

This lentil and rice recipe is one variation of how I prepare lentils.  The possibilities are endless.  The best thing is, you can prepare a quick, easy, and delicious meal that your family will love, in just 30-40 mins.  And the leftovers, so much better on day two.

Ok, let’s get to it…

Lentil Stew Ingredients:

4 cups green lentils – washed

1 tbsp extra virgin olive oil

1/2 large sweet or yellow onion – rough chopped

1- 15oz can of diced tomatoes

1 tomato – rough chopped

1/2 cup green pepper – rough chopped

5 cups of water

2 tsp chopped garlic

1 tsp ground cumin

1 tsp onion powder

1 tsp red pepper flakes

1/2 tsp hot paprika

1/4 tsp ground nutmeg (trust me on this one!)

1 tbsp kosher salt

1 bunch of kale or mustard green – washed and chopped into bite size pieces

Curry Rice Ingredients:

3 cups long grain brown rice

4 cups vegetable broth

1/2 cup water

2 tbsp unsalted butter

2 tbsp mild curry powder

1 tsp turmeric powder

1/4 tsp cumin

1 tbsp kosher salt

1/2 tsp group black pepper

Gather all your ingredients before you begin.  Use a blender or food processor to finely chop your onion, green pepper, tomatoes, and garlic.  Set aside.  In a large dutch oven or stockpot add the olive oil and heat on medium low.  Pour in the vegetable mixture and sauté for 3-4 minutes.  Add the lentil beans, water and spices.  Stir well and cover.  Turn heat up to medium high and cook for 15-20 minutes stirring occasionally.


Using a rice cooker or pressure cooker, add the rice ingredients and stir to mix well.  Cover and set the cook time according to your machines instructions.  My pressure cooker cooks brown rice in 12 minutes.  You can use a stove top to prepare the rice, however it will take longer to cook.

Stir the lentils and add the greens. Reduce heat and simmer for 10 minutes.  Add more water as needed in small amounts.  The lentils are done when they are soft but not mushy. The little’s helped with the greens last night!



Once your rice has finished, fluff and add some to a plate. Spoon the lentils over the rice and garnish with avocado slices, green onions,  and sour cream if you wish.  I only opted for the avocado last night.  Serve hot.  Enjoy!
